Really easy recipe for lemon curd

Lemon curd is much more simple to make than I though - here is how to do it:

Ingredients:

2 cups of fresh lemon juice.
1 ½ cups of sugar.
16 medium egg yolks.

Method:

In a double boiler, over medium heat, whisk together the lemon juice, sugar and egg yolks.

Cook the curd for about 10 minutes, stirring constantly.

Remove from the heat and allow to cool.
